All our grapes are carefully hand-harvested to preserve the full integrity of the fruit.
During vinification, we use temperature-controlled tanks and perform gentle cap management using naturally occurring carbon dioxide produced during fermentation.
We apply soft pressing techniques, saturating the must with inert gas and cooling it simultaneously in a controlled environment to preserve the most delicate aromas.
For certain varieties, we carry out cold maceration for several hours before pressing, in order to extract deeper aromas and greater complexity.
